Mac and Cheese, my favourite comfort food.

It’s been a while since I’ve done a cooking blog and as I had planned on making macaroni and cheese, I thought it was the perfect time to take some photos and share my recipe with you.

I’ve loved mac & cheese since I can remember and my middle son shares in this love too. It’s not a complicated recipe but it’s how I do it and have done for a very long time, because it works and tastes amazing. Okay let’s begin.

Recipe

250g/8.8oz dried macaroni

1 packet of cheese sauce powder of your choice.

300ml milk

45g/1.5oz soft cream cheese

45g/1.5oz parmesan cheese, finely grated

50g/1.7oz grated mozzarella

50g/1.7oz grated four cheese mix or any cheese you like

Pre heat oven to GM 5, 190c, 375f

Method

Bring a large pan of salted water to boil and add the macaroni, reduce the heat slightly, leave to cook for around 10 minutes or until tender.

Whilst waiting for the macaroni you can start to make the sauce. As per the instructions on the packet of cheese sauce, get your base ready, you can also do this by making a simple rue, which is just flour, butter and milk. Once your base is ready, add your cream cheese and mix in well, add your grated cheeses and half of the parmesan, stirring until all the cheese has melted, you can add salt and pepper to taste.

Once your macaroni has cooked, drain it and add it in to your cheese sauce and mix until all the macaroni has been completely covered in sauce.

When you’ve finished mixing the macaroni in to the sauce, transfer it all in to an oven proof dish and top with the rest of the parmesan cheese.

Then put the dish in the middle of your preheated oven and bake for 25 minutes until the top has browned, remove and serve. This should serve 4 people, if you want to share it 😀

And there we have it, my go to, very simple but delicious mac & cheese recipe.
