Who wants a yummy cookie recipe? This is a recipe I’ve used many times and my lot love them. I’d like to share it with you.
125g unsalted butter at room temperature
225g caster sugar
225g self-raising flour
1tsp salted caramel flavouring or vanilla
75g of white chocolate chips
75g milk chocolate chips or roughly chopped from a 150g bar
Cream the butter and sugar together in a large mixing bowl, I find it better to use a metal spoon rather than a wooden one. Add in the egg and salted caramel flavouring and stir it in. Next, sift in the flour and add the chocolate, mix using an electric mixer if you have one, until all the ingredients are combined and have formed a dough.
I use an ice cream scoop when I measure out my balls of cookie dough, just so that I can get roughly the same sized cookies, you can use any means you like. Put your balls of dough on to a lined, sheet tray, making sure to leave ample space between each ball as they will spread out, but it’s not too much of a problem if they do, they’ll just be a bit misshapen, but still taste as good.
Bake in your pre-heated oven for 15-18 minutes. If you like your cookies still chewy in the middle then 15 minutes should be plenty, leave for a bit longer if you prefer them crunchier.
Put your cookies on to a cooling rack and leave to firm up.
